At Hunter Wine Lab, we believe the best wine is made with as little interference as possible. Our approach is guided by three pillars — Exceptional Fruit, Our Winery, and Our Passion — and it's these pillars that shape every decision we make in the vineyard and the cellar.
🌿 Minimal Intervention
We let the fruit lead. That means no added acid, no added sugar, and minimal fining during fermentation. We use heritage yeasts and organic fining products to support — never override — the natural character of each vintage. The result is wine that is a true expression of place.
🍷 Unfiltered & Honest
Many of our wines are unfiltered, preserving the texture, complexity, and living character that filtration can strip away. What you see in the glass is what the vineyard gave us.
✅ Vegan-Friendly by Design
Our commitment to organic fining agents means the majority of our wines are suitable for vegans. We don't use animal-derived fining products like isinglass or casein — instead, we rely on plant-based and mineral alternatives that align with our philosophy of working with nature, not against it.
📍 Fruit First — Wherever It Grows
The Hunter Valley is our home, and you'll find all the regional staples in our portfolio — Semillon, Chardonnay, Shiraz, Verdelho. But we also make wines that excite and interest us. Fruit from cool-climate regions like Hilltops and Tumbarumba lets us explore varieties that thrive at altitude and express a different sense of place. It's the same minimal intervention philosophy, applied to wherever great fruit grows.

We maintain traditional techniques like open fermentation and hand and feet plunging, treating the product with the respect it deserves. At the same time, we embrace research and innovation — because our passion for learning is just as important as our respect for tradition.
