"The Christmas Spirit" - Pink Prosecco, Gin & Raspberry Cocktail

Looking for the perfect cocktail to adorn your Christmas table or ring in the New Year? Look no further than The Christmas Spirit designed by our good friend @jenna.rose.o.


2 tbsp Raspberry mix [see below for ingredients and method]

15-30 ml Gin [you decide]

Pink Prosecco


Cucumber, mint and lemon [to garnish]

Ingredients for Raspberry mix

2 punnets fresh raspberry's [frozen is ok if fresh not available]

2-3 tbsp lemon juice

2 tbsp caster sugar


  1. Combine the raspberries, lemon juice and caster sugar in a saucepan over high heat. Cook, stirring until sugar has dissolved and raspberries are soft. Use a fine sieve and the back of a spoon to push through as much liquid as possible into a jug. Discard solids. Cool Raspberry mix in fridge.
  2. Pour 2 tbsp of the raspberry mix into a glass. Top with ice. Add 15-30 ml Gin and fill with Pink Prosecco. Garnish as you like. We used cucumber, mint and a slice of lemon.
